Yeah, anime like high school of the dead are like you said, just a joke. Their viewers aren't looking for a terribly deep experience, they just want base gratification. The original HotD manga was actually written by a famous hentai artist. Personally I like moe occasionally as long as there's no ecchi, anime like K-On can be surprisingly cathartic.
There are however plenty of good anime that have come out in the past few years. Mononoke, Tengen Toppa Gurren Lagann, Katanagatari, Baccano!, Bakemonogatari, Gankutsuou, FMA: Brotherhood, Last Exile, Planetes, Durarara just to name a few.
