Ghost in the Shell: Stand Alone Complex, both season are absolutely sublime

Perhaps not anime, but the new Spider-man movie (across the spider-verse) was really nice. Otherwise Rose of Versailles, Ie Naki Ko and Emma are classic 'must watch' series (although they start out quite slow).
